Brioche buns with cocoa and macadamia nut cream 🌰🍁🍯🥮

BRIOCHE DOUGH (8-9 buns):

  • All-purpose flour – 560g
  • White sugar – 50g
  • Eggs (room temperature) – 2
  • Butter – 100g
  • Salt – 0.5 tsp
  • Dry yeast – 7g

COCOA & NUT FILLING:

  • Macadamia nut cream with cocoa and honey – 180g
  • Milk chocolate – 85g
  • Butter – 100g
  • Powdered sugar – 80g
  • Cocoa powder – 80g

GLAZE:

  • White sugar – 3 tbsp
  • Water – 1.5 tbsp

+ Sprinkle with chopped roasted macadamia nuts on top.

Preparation process:

Mix the milk with sugar and let the mixture rise.

Beat the eggs with sugar. Add the milk and yeast mixture, stir in the flour. Gradually incorporate the butter into the dough. Shape it, place it in a bowl, cover it with plastic wrap and let it rise until doubled at room temperature or leave it in the fridge overnight.

While the dough rises, prepare the filling. Melt the butter with the milk chocolate. Mix in all the other ingredients.

Make the glaze. Combine sugar with water and bring to a boil over low heat, stirring until the sugar dissolves completely.

Roll out the risen dough on a floured surface to 5-6mm thickness, spread the filling and shape the buns as shown in the video.

Brush the buns with beaten egg and bake at 180°C for about 20 minutes.

After baking, immediately brush the buns with glaze and sprinkle with nuts.
