BRIOCHE DOUGH (8-9 buns):
- All-purpose flour – 560g
- White sugar – 50g
- Eggs (room temperature) – 2
- Butter – 100g
- Salt – 0.5 tsp
- Dry yeast – 7g
COCOA & NUT FILLING:
- Macadamia nut cream with cocoa and honey – 180g
- Milk chocolate – 85g
- Butter – 100g
- Powdered sugar – 80g
- Cocoa powder – 80g
GLAZE:
- White sugar – 3 tbsp
- Water – 1.5 tbsp
+ Sprinkle with chopped roasted macadamia nuts on top.
